Eye fillet is an excellent choice, it&#039;s my favourite cut of meat.  When using the finger to thumb method what you need to do is touch the fleshy pad below the second knuckle of your thumb, which also makes up part of your palm.  You&#039;ll notice each different finger you use will increase or decrease the amount of tension you can feel in this part of your hand.

This is just a general guide only, and as eye fillet is be the most tender cut of meat it will feel softer than other cuts.  Another method which may help is to check how much red or pink you can see at the sides of your eye fillet, and will give you an indication of how much juiciness remains inside your steak.

At the end of the day just having a go and practising will have you cooking like an expert in no time.
