Spring Has Finally Sprung….
•September 2, 2008 • Leave a CommentYes it’s the start of Spring, and for me and many people in Australia it’s been quite a long Winter. The recent rains have been great for topping up the dams water levels, but I’m really looking forward to the sun coming out again… and Summertime!
So with that in mind, I decided to jump ahead a bit and pull out one of my favourite bbq recipes for Summer -
Chilli And Lemongrass Prawn Skewers
500g Tiger Prawn meat or cutlets
1 stalk of lemongrass
6 – 8 medium red chillies
100ml extra virgin olive oil
Salt and Pepper to taste
I like to use the prawn meat, as it’s already been shelled, otherwise you will need to peel and devein the prawns. Carefully rip the head off, take off the legs, peel away the transparent outer shell and take off the tail.
To devein, slice a small incision down the length of the back and carefully pull out the pooper valve.
To prepare the marinade, slice the lemongrass stalk in half lengthways. Using the side of the knife, place across the stalk and give it a good couple of taps with your palm, to crush. (This will help to release the flavour of the lemongrass.)
Chop the chillies very finely. Put the prawns, lemongrass and chilli all together in a bowl, pour the olive oil over the top. Sprinkle some salt and pepper on top, and mix it all together. You may need to add more olive oil to cover all the prawns, just add as you need it. Cover and refrigerate for at least an hour to marinade properly.
Sit the wooden skewers in water while the prawns are marinading, to keep them from burning on the barbie. Arrange the prawns on each skewer (you should be able to fit 4 – 6 per skewer, depending on the size of your prawns).
Fire up the barbie to a medium heat, and place your skewers on the hot surface. Turn after about 2-3 minutes, when the bottom starts to go orange. Cook on the other side for about 2-3 minutes, until the entire prawn is an orange colour.
This is a very quick and simple recipe, and one which is sure to impress your friends next time you have a barbie!
